Is it not possible to launch a theme designed in the Lutron app using a Pico Audio Remote? I feel like you should be able to program the middle button to initiate a Scene instead of a Sonos Favorite.

No. Some of the 4 button models allow you to do different things but the rest are coded for specific functions.
That may not be correct. With a regular Pico, you can control audio the same as with an audio Pico. I believe the internals of both Picos are the same. If that is the case, you should be able to use an audio Pico to set a scene. The only obstacle I can see is that the app won't let you set a scene.
